Homemade Honey and Multigrain Bread
A flavourful, soft, homemade loaf bread, packed with 6 different grains and a hint of honey!
The inspiration for this bread came from a fellow foodie, Camille of FoodFanaticTT, who did a story showing a packet of multigrain. I honestly didn’t even know that existed. I usually buy each grain separately and put them together. That multigrain packet can be found in any grocery store, and usually contains oats, sunflower seeds, pumpkin seeds, flax seeds, sesame seeds and chia seeds. If you cannot find this, then just use whichever grains you have on-hand. If all you have is oats, then use 1 cup of oats! Nothing is wrong with that at all.
This bread is very nutritious and delicious the same, because it’s packed with fiber and honey; a healthy sweetener. My 2 and 6 year olds loves it as well. It tastes best went buttered on the outsides and toasted in a skillet to develop a nice golden crust. Fill it with anything, cheese, sausages, roasted chicken, eggs, vegetables, sauces and toast on the outside to make an excellent sandwich.
Check out how I made this in the video below :).
Tips for Making this bread:
Use any grains you have on hand to make up 1 cup.
You can replace 1 cup of the all purpose flour with 1 cup of whole wheat flour. Just keep in mind the dough will be a little less fluffy with wholewheat, but it will still taste good.
You can use your electric mixer with dough hook attachment to do the kneading for you.
I like to use an assisted rise when making bread because it saves me alot of time. If you want to do this, then place your dough to rise in an oven set at 175 degF for 20 minutes. If not, then leave it to rest until doubled in size in a warm place.
I like to use my electric knife to cut this because it makes the task much easier. But of course you can go ahead and use your serrated bread knife instead.
Yield : 1 loaf
Ingredients
1 1/4 cup warm water
1 packet yeast
1/4 cup honey
3 1/2 - 4 cups flour
2 teaspoon salt
1 cup multigrain mix
1/3 cup powdered milk
Pinch of ground ginger
1 1/2 tablespoon melted shortening
Toppings:
1 tablespoon honey
2 tablespoon multigrain mix
Method
Add water, honey and yeast to a bowl, and stir until dissolved. Let sit for 5 minutes until it becomes foamy. Add the 2 cups flour, multi grain, powdered milk, shortening and salt and mix until properly combined. This can be done with an electric mixer. Add the remaining 1 1/2 cups flour to form a soft dough. Knead for 10 minutes, sprinkling in more flour if needed. Place in a warm place to allow to double in size (about 90 minutes or 20 minutes in your oven set at 175 deg F).
Punch down dough and knead for 5 minutes. Roll out the dough in a rectangle and roll from one end like a jelly roll. Place in a buttered 9x5 loaf pan. Brush the top of the loaf with the remaining honey and sprinkle the multigrain on top. You can press it gently to make sure it sticks to the top. Leave in a warm place to rise until doubled in size (about an hour, or 20 minutes in the oven set at 175 degF).
Bake at 350 degF for 30 minutes. Remove from the pan immediately and allow to cool on a rack. Slice into 14 slices and enjoy!
