Homemade Strawberry Jam

Delicious homemade jam with only 4 ingredients!

Who knew jam can be made so easily!! This came about when my daughter wanted me to make something called “Strawberry Twists” which she saw on food network, and I did not have any jam on hand. I had frozen strawberries though, so I set out to make the jam before spreading it on homemade pastry dough and baking. the jam was a major hit! In the past I tried to get my daughter to try some store bought jam so many times, that I just stopped buying them. Little did I know, she would fall for the homemade stuff.

So with this recipe, you can add more sugar depending on the tartness of your berries. And if you prefer a slightly thinner consistency, go ahead and omit the cornstarch. Either way, the taste is great! And I have had this with bread, homemade biscuits, crix crackers and even ice cream.

Yield: About 1 1/4 cup of jam

Ingredients

1 pound of strawberries, sliced. Frozen or fresh will do.

3/4 cup sugar

1 tablespoon lime juice

1/4 teaspoon lime zest (optional)

1 tablespoon cornstart mixed in 1 tablespoon cold water

Method

If you are using fresh strawberries, remove the stems before slicing. Place strawberries, sugar, zest and lime juice in a saucepan. Simmer on medium low heat for about 20 minutes. Use a potato masher or fork to mash the strawberries to your desired chunkiness, and add the cornstarch slurry to thicken. Remove from heat and allow to cool completely before storing in the refrigerator for up to 2 weeks.
