Coconut Ice Cream Popsicle

I love chocolate, but sometimes a coconut flavoured frozen treat is exactly what is needed in our tropical weather.

I was inspired to make these from Natasha of Trini Cooking with Natasha. She kept sharing these delicious frozen treats called “sucker bags” which are basically a delicious ice cream-based treat that has been frozen in small plastic bags. You have to bite a hole in the corner and literally “suck” the deliciousness through; hence the name “sucker bag.” I tried this method with my little girls but they had difficulty in perfecting the “sucking” so I decided to do them as popsicles! We have a name for that as well in Trinidad; coconut palettes! When I was a little girl, you would see vans passing from house to house selling palettes. They were also milk-based and came in an assortment of flavours; coconut, peanut, chocolate…anything!

As I write this post, our government has now issued a lockdown in our country due to the covid-19 pandemic. School has been closed a couple of weeks now, and some parents have been home with them. This is a simple treat for the kids and adults to enjoy while being at home trying to flatten the curve for this tragic situation the country has now embarked upon.

Yield: 7-10 Popsicles depending on the size.

Ingredients

2 cups water

1/3 cup coconut milk powder

1 cup evaporated milk

1/2 cup sugar

1 teaspoon vanilla extract

2 tablespoon custard powder plus 2 tablespoon liquid milk

Method

Combine the first 5 ingredients in a saucepan, and bring to a low boil. Allow the sugar to dissolve. Whisk the custard powder and milk in a separate bowl. Add this to the saucepan and whisk until combined. Let the mixture boil on medium heat until it has thickened (about 10 -15 minutes). Allow mixture to cool, fill Popsicle moulds and freeze.
