One Bowl Chocolate Chip Blondies

I think the idea of making a giant chocolate chip cookie pie that requires mixing everything in just one bowl to be one of the best things ever!

So it is the week of May 15th, as I type this, and the country is still battling the Coronavirus (Covid-19) pandemic. Schools have been closed, and kids are home with caregivers. The majority of the population is exercising social distancing and is therefore at home with their families most of the time. A lot of families have started practicing quarantine baking…LOL. So I just had to share a recipe that is kid friendly and can be done in no time. This recipe is one that has some excellent criteria for being home with your families during this tough time. You can make it together as a family (quality time), everything is done in one bowl (no cleanup) and it is made in less than 1 hour (time-saving).

What is a Blondie? A blondie is the non-chocolate version of a brownie and aspires to a more vanilla flavor. Just like a brownie, it can be fudgy or cakey; depending on your preference

Another reason why I wanted to share a chocolate blondie recipe, is because making the cookies can be difficult for some. In order to perfect cookie-baking, you must have plenty practice. I know this from experience since I have had plenty disasters. So this blondie has all the flavours of the chocolate chip cookie, without the hassle that comes with making cookies. You just pour everything in a pan, and cut into squares of deliciousness. That’s it! No need to place tablespoonfuls of dough onto a few cookie sheets; no need to babysit cookies as they bake since they can burn and no need to cool on a rack!

Tips for making these Blondies:

  1. Make sure your butter has cooled.

  2. All other ingredients should be at room temperature.

  3. You can use either white or brown sugar, however, brown sugar adds a tad more flavour and moisture than white.

  4. The cornstarch is added to give a more dense texture. If you do not have this then leave it out, it won’t affect the taste. I promise!

  5. I like to use mini chocolate chips as well as the normal ones, just because it allows you to get more chocolate in every bite! But you can use the normal ones only if you prefer. You can even add some nuts if you want.

Ingredients

2 1/2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

2 tablespoons corn starch

1 cup melted butter, cooled

1 1/2 cups brown sugar

1 1/2 teaspoons vanilla extract

2 eggs

1 cup of normal sized semi sweet chocolate chips

1 cup mini semi-sweet chocolate chips

Flaked sea salt (optional)

Method:

  • Preheat oven at 350 degF, and line a 9x13 inch pan, with foil or parchment paper.

  • In a bowl, combine the flour, baking soda, baking powder, cornstarch and salt and set aside. Whisk the butter and both sugar until fluffy (about 2 minutes). Add the eggs, and vanilla and continue whisking until fluffy (about 3 minutes). Add the dry ingredients and mix until just combined. Fold in the chocolate chips. Pour batter in the prepared dish and bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.

  • Sprinkle with the flaked salt as soon as it comes out of the oven.
