Cookie Butter!!

Cookie Butter? Yes that’s what I said! With a name like that you just know it will taste divine! It is the new spread on the block that plans on taking over the world, one cookie at a time.

It comes in crunchy or smooth and originated from the Belgium.

Biscoff cookie spread was born out of a Belgian reality show called The Inventors. A contestant on the show, wanted to know: Why weren’t Biscoff cookies spreadable? Kozanoglu at Lotus Foods explained, “It was a common practice in Belgium that parents would take a slice of bread, put butter on it, crush Biscoff cookies, and then add another piece of bread to make a sandwich.” Scheppers and her friends were already serving make-shift cookie butter to their kids, so when she finally got the platform to suggest Lotus Foods do something about it, she did. “She didn’t end up winning the contest, but Lotus bakeries approached her and got exclusive rights to create the Biscoff spread,” Kozanoglu said.

Cookie Butter 101

Up until about a month ago, I was asking the question“What in the world is Cookie Butter?” Well now that I have tasted it, I can endorse it with confidence. Cookie butter is a spread, similar to that of peanut butter and nutella, made with cookies! Yes you read right….cookies! It originated from Europe where it is fondly known as speculoos (meaning spice cookies) spread and it mainly consists of pulverized cookies, of course! A little fat (like vegetable oil), sweetener and some water, and has only hit the US in 2011. And to be absolutely honest, I only found out about it this year. I was reading one of my cooking magazines (did I tell you I’m addicted to these?) and they mentioned cookie butter as the new craze in the US. I was instantly intrigued and set out on a mission to find it locally.

What can I use it for?

There are many ways of using it. You can have it on toast, with fruit, pancakes, pretzels….you name it! I made the mistake once and spread it on bread- My god it was sooo more-ish! Another was of using it is in baked goods similar to that of peanut butter and I also strongly believe that it will do amazing things to your palate if eaten with ice cream as well. And if you’re anything like me, then you can even just eat it right out of the jar with a spoon! Pure Heaven!

This is a MUST try in my view. So you need to drop everything and head on over to Peppercorns in Maraval and get some. At least this is the only place in Trinidad I’ve been able to get it. But I must warn you- it can be highly addictive! It is flavourful, creamy and very very moreish once you have your first try. I introduced my 17 month old to it and her favourite words have now become “cookie butter.”
