Storage tip for Ginger

I buy ginger in large amounts to use whenever I may need it. As such its shelf life needs to be extended to make sure that it doesn’t spoil. The best way for me is to freeze it!

I learnt this tip from my mom who usually buys it in bulk to use for fresh ginger tea (which is the best tea when you have a sore throat). We scrub the ginger pieces with the skin on, toss them in a ziplock bag and place in the freezer.  When they are needed to be used, allow to thaw for about 2 minutes and grate on the fine side of a grater. It comes out looking like snow (as Rachel Ray says), or like the frost from those older refrigerators. The good things about this is that you don’t need to peel it. Of course if you want to, you can.

I like to have lots of ginger on hand to make my Asian glazed salmon and ginger basmati rice. Sometimes I add a little to my Chinese cuisine or even stewed chicken.

So next time you want your ginger to last, place it in the freezer!
